Missing recipes
It's the time of year for happiness and joy; it's also the time of year for missing recipes. Who can even count the numbers of people who set out to cook their favorite thing (which they haven't done in over 12 months, needless to say), only to find that the instructions cannot be found.
Here at The News, we get hundreds of requests and cannot answer them personally because of staff and file constraints. But one request turns up all the time: Mrs. Schottmiller's Fruit Cake. (The spelling is probably wrong.) And it bugs us. We think it was an old Courier-Express recipe, and it must have been really great. Does anyone know?


So, you want us to give you a recipe and waste our time when you you start out your request by stating that you are too busy to accomodate us?

Mrs. Schottmiller's Fruit Cake
1 lb butter
1 lb very fine sugar (Powdered)
10 eggs
4 cups flour
1 lb candied cherries, (Use half green & half red cherries for more color) left whole
1 lb pineapple, cut up
2 lbs white raisins
1 lb pecan halves, left whole
1 lb walnut halves, left whole
1 cup brandy or liquor
Cream butter, add sugar and cream thoroughly. Add eggs, one at a time beating well after each addition. Add flour, then fruits & nuts.( Mix 1 cup flour with the fruit & nuts so that it separates better.) Add the brandy and mix well. Place in lined and buttered loaf pan or tube pan. Bake at 275 degrees according to size - about 2 hours. Baste occasionally with additional brandy. Let cool then wrap & store.
This is a light as opposed to dark fruit cake which is very colorful when cut. I usually bake the cakes the week end following Thanksgiving in order to give the flavors time to mingle before serving for Christmas.
And no, the spelling is not wrong.

I am looking for a recipe for a almond ring. Whenever I would get to buffalo years ago I always made a point of going to Ken Paul Bakery, but alas they are no longer in business(That I know Of) the ones at Tops Wegmans Etc. do not even come close to the YUMMY!!! ones I got at Ke Paul So I want to attempt to make it at home. Can anyone help me?????
